Northeast's First Molecular Gastronomy Dishes Now Available in Guwahati

Exploring the world of science and food, Guwahati’s Hotel Shoolin Grand has now introduced Molecular Gastronomy- a modern cuisine as a part of their menu. 


Situated in Guwahati's six-mile area Hotel Shoolin Grand is the first to launch this modern cuisine in entire northeast India. 

In simple terms, Molecular Gastronomy is the scientific discipline concerned with the physical and chemical transformations that occur during cooking. It is a modern style of cooking that takes advantage of many technical innovations from the scientific disciplines. 


Molecular gastronomy involves the application of scientific principles in the preparation of food. 


Chefs at Shoolin Grand are currently using chemicals in dry, liquid, and gas forms. The dry ingredients include calcium lactate, sodium alginate, Xanthan gum, agar-agar, and more. The liquid ingredients include carbon dioxide and liquid nitrogen among others. 

Currently, nitrogen oxide (N20) is the only gas that they are using. Must try molecular dishes from their menu includes Deconstructed pan, Rum-malpua flambe, Horror movie popcorn, Addicted fried chicken, Bathtub, N20 battered onion bhajiya, Galoti cornetto and Chicken tikka masala tart among others. 


The Deconstructed Pan includes betel leaves, pan mousse, white chocolate glaze, dry cherry with N1N2. Bathtub, on the other hand, consists of dodhi barfi, brownie, cream, and honey caviar. 


Among the list of dishes, the most innovative among them all are molecular soups. 
Chicken cappuccino, a molecular soup includes thyme-infused chicken soup with parmesan foam. 

This modern cuisine will be available at Hotel Shoolin Grand's restaurant 'Da Vue' and 'Roots'- a 24*7 cafe between 1 pm to 11 pm. 


Roots is Guwahati's only eatery which is open 24*7.
